EFFECTS OF ACTIVATED ALKALINE WATER ON THE GERMINATION PROCESS AND INCREASING ISOFLAVONE CONTENT OF SOYBEAN SEEDS

In order to benefit consumers and the economy of the producer, we have studied the use of activated alkaline water during soybean soaking to shorten germination time and increase isoflavone content of soybean grains. It was found that the quality of soybean germinated when using normal water and activated alkaline water was determined. The results demonstrated that the seeds were soaked in activated water hydrated at 86.86% and achieve germination rate at 80% a day earlier than in normal water. When soybean seeds were soaked in normal water and activated at 28 ° C for 2 hours, then germinated for 3 days collected soybean seeds with corresponding levels daidzein of 19.08 and 23.46 mg /100g.
