EFFECT OF SOME FACTORS ON THE EXTRACTION PROCESS OF TOTAL ANTHOCYANINS FROM THE LEAVES OF PAEDERIA SCANDENS (LOUR.) MERR.

Paederia scandens (Lour.) Merr. is a climbing plant, easy to grow, and dahlias are used as a medicine with heat-clearing, detoxifying, antibacterial, analgesic, and anti-diarrheal effects, whooping cough, bone and joint pain, and hunger. Paederia scandens (Lour.) Merr. leaves contain compounds with antioxidant activity, including anthocyanins. Anthocyanins are compounds with strong antioxidant activity, so they are often exploited and applied in the production of health-protecting foods. Currently, there is no complete research to determine the parameters that affect the ability to obtain total anthocyanins from this type of leaf. The aim of this study is to investigate parameters including the type of solvent, the ratio of acetic acid added in the extract, the ratio of solvent materials, extraction time, and the number of extraction times. The total anthocyanins content obtained in the extract was analyzed by differential pH method. The results showed that the suitable factors for extraction of total anthocyanins were as follows: water containing acetic acid at a concentration of 8%; material/solvent ratio, 1/25 (g/ml); extraction time, 120 minutes; the number of extraction times, 2 times
